Located just a few kilometres south of Sydney, Archie Rose Distilling Co. is one of Australia’s most highly awarded distilleries. Founder Will Edwards is driven by the interlocking values of quality, innovation, authenticity and education. The company is re-defining Australia’s rich tradition in distilling by producing a diverse range of whiskies, gins, vodkas and rums, as well as one-off collaborations, limited releases and spirits experiences, in the process forging an authentic new tradition that’s boldly innovative and true to its roots.

In 2014 Will founded Archie Rose Distilling Co. in Rosebery, Sydney, with a goal of being the world’s best producer of Australian whisky, gin and other spirits and spirits experiences, showcasing the highest quality Australian ingredients.

Will's passion for spirits began in his early 20s while experimenting with homebrew, spirit-based infusions and oak maturation, and reading up on the chemistry and engineering that underpins distillation. At 24, he left his corporate job, travelling to New York and Tasmania to explore why there weren’t more distilleries in Australia and specifically in Sydney.

He now leads a team of 110, who together have contributed to Archie Rose winning over 400 global awards. Will himself has been named Australia’s Young Entrepreneur of the Year, Global Young Achiever of the Year and a Forbes 30 under 30 winner.

The Archie Rose Bar & Cellar Door opened in March 2015. It attracts hundreds of thousands of people every year, providing them with the opportunity to make their own gins and whiskies on site.

In 2020, Archie Rose moved to their new Botany distillery, designed and built by Will and master distiller Dave Withers. There, the mash filter allows them to process heavily roasted, locally grown malts and some unmalted native Australian grains. The copper vacuum botanical stills lets the team eliminate the detrimental impacts of heat by cold distilling their botanicals, yielding far greater clarity of flavour.
